Healthy Oat Carrot Cake Cookies

I found these oat cookies, and they immediately called my attention.
I'm always looking for sweet alternatives cause I LOVE sweets!
But I'm aware that sugar isn't best for our health.
That doesn't mean that I don't treat myself once in a while.
Anyway, I enjoyed this recipe and the fact that it's a healthier option is even better!
Ingredients:
- 1 cup of instant oats
- 3/4 cup of oat flour (just blend instant oats)
- 1 1/2 tsp of baking powder
- 1 1/2 tsp of ground cinnamon
- 1/8 tsp of salt
- 2 tbsp of coconut oil
- 1 larg egg
- 1 tsp vanilla extract
- 1/2 cup of maple syrup (no sugar preferred)
- 3/4 cup of grated carrots
Prep:
- Preheat oven to 325 ° F
- In a medium bowl whisk all of the dry ingredients (except for the carrots).
- In a separate bowl whisk all of the wet ingredients.
- Combine dry ingredients & wet ingredients.
- Fold in the grated carrots.
- Prep baking sheet with coconut oil or unsalted butter.
- Add rounded scoops to baking sheet.
- Bake for 12-15 minutes.
I would personally taste the dough before baking and make sure it's as sweet as I like.
Other than that I think this recipe is simple and delicious!
