Stuffed zucchini boats

I'm always looking for different recipes to make for dinner, and I came across these zucchini boats that were sooo yummy! They also have a descent amount of protein. I'm thinking about substituting the ground beef for Turkey beef next time to make a bit healthier. I hope you enjoy this recipe as much as I did!!
Ingredients:
- 4 medium zucchini, cleaned, halved length-wise and seeds scooped out.
- Cooking spray
- ½ teaspoon Kosher salt + additional for precooking the zucchini
- ¼ teaspoon ground black pepper + additional for precooking the zucchini
- 1 Tablespoon olive oil
- 1 medium onion, finely diced
- 1 pound ground beef
- 1 teaspoon Italian seasoning
- 1 can of tomato sauce
- 1 cup cooked rice
- 1 cup of Mozzarella cheese
Prep:
- Preheat oven to 350 ° F.
- Wash zucchini, then slice in half lengthwise. Scoop out seeds with a small spoon and set aside. Place zucchini halves on baking sheet.
- Heat olive oil in large skillet over medium-high heat. Add onion and cook until softened, then add ground beef and cook until well browned. Stir in tomato sauce, oregano, garlic powder, salt and pepper.
- Spoon filling in prepared zucchini halves. Sprinkle with cheese and bake 20-25 minutes.
